- Cultivation: Grown in the warm climate and rich Nile Valley soil of Upper Egypt, which gives the calyces their characteristic deep red color and high anthocyanin content.
- Harvest: Calyces are hand-harvested at full maturity, once the outer flower part has ripened and reached optimal color and acidity.
- Post-Harvest Handling: Harvested calyces are sun-dried or shade-dried under controlled conditions to preserve color, flavor, and nutritional properties while preventing mold or discoloration.
- Cleaning & Sorting: Dried calyces are cleaned, sorted, and graded to remove stems, seeds, and foreign matter, ensuring a consistent, high-quality final product.
